The University of New Mexico Community Engagement Center (UNM CEC), proposes Food as Medicine: an indigenized education that re-connects and re-affirms ancestral knowledge, heritage, history, and ways of being through community and land-based learning. This model ties curriculum across all subjects, school food policies & cafeteria food, family engagement, community engagement, and professional development to support an Indigenized whole school model. The model reimagines teaching and learning by bringing a constructivist, Reggio Emilia approach to the school day. This approach informs their influence on curricula, pedagogy, and assessment. These efforts are wrapped around a focus on nutrition that shows up in and outside the classroom.
